Great tips, as always, Nicole! I might add a fourth which is to put a partially transparent (70% or so) black or white box (whichever is opposite the text color) behind the text and the width of the screen but just slightly wider than the box vertically. This can make the text pop nicely but still expose the bulk of the image to the view of the learner. Of course, there are many other potential suggestions, but I have used this one quite a bit with good success.
