So I'm embarrassed to say that I didn't have an e-learning portfolio...until now! You can now find me at https://kimberlyeng.portfolio.site/
I made this in Carbonmade; it was pretty easy since it uses blocks, like Rise. My tip is to don't wait until an e-learning challenge asks you to post a portfolio to make one. :)
Thanks to everyone who posted examples already for inspiration. I would like to continue adding more content to my portfolio, including more public health-related examples (since it's the industry I work in) and explanations on how I think about these challenges.
