I can't seem to figure this out. I see where to change the hyperlink text color in the regular powerpoint theme, but the Engage color scheme doesn't seem to have it.
The color of hyperlinks isn't currently something you can customize through the Engage color schemes. You can, however, adjust the color of the hyperlink text manually if you want it to be something other than blue. There's a color option in the text editing tools that allows you to change the color to whatever you like:
