For the most part, Engage interactions are what they are. The basic "customization" is changing the font and adjusting the color palette (which does help the interactions blend into your course). If you want some different kinds of interactions, there are a few "community" ones available through the Articulate site.

FYI: I like using Timelines as "content lines." That type of interaction provides the most on-screen space for text and images. Instead of periods of time, I use the periods to group content, with each marker being a note or a step in a process (which, unlike the Process interaction, can be numbered any way you want, e.g., 1a, 1b, 2a, 3a, or whatever). Just something to think about to change things up a bit.
