You can definitely change the color of the Tabs. When you change your Engage color scheme, look for the parameter called Buttons>Navigation Active, Buttons>Navigation Hover, and Buttons>Navigation Normal.
You can also change the font that gets applied to the tabs. Change the Title Font in Interaction Properties>Colors and Effects. This will also change the font on the black title bar at the top. Here's more on customizing fonts.
As far as the font color, it's currently not possible to change that from white. That would make a good feature request though.
