One question: I have used accordion with some texts in panels, imported in
Storyline and then publish it to use in Rise360, however I am unable to
select and copy the text from accordion panels from published in Rise. How
it can be enabled as I want users to copy the text to use?
If you meant in Engage360, then I tried to find settings to enable copying
text after publishing, but I don't find any settings related to that. Can
you guide me how to do that?
Copying text from a Storyline block in Rise 360 is not a feature, but I can see how that would be useful! We love hearing new ideas in the form of a feature request!

How to launch and work on Engage 360? I don't see it in my existing subscription

Engage 360 is part of the Studio 360 suite. To access it, launch your Articulate 360 desktop app and then click on the Open button next to Studio 360.
From there, a dropdown menu will appear where Engage 360 is one of the options.

You would need to make changes in the actual file wherever it was created.
