Out of the box, you cannot remove the thumbnails but you may be able to get some good ideas on creating your own from this thread:

I have used this method to create a standard generic image that could go with any course - push pins. I have several different colors and can use whatever happens to look the best with the course player. Using the same image all the time can be helpful to the learner. When the learner sees that push pin on whatever course they might be in, they know there are attachments located there.
