Good questions, I don't believe you can make a particular custom player the default for each and every time you open Presenter or delete the built in player. If you follow the steps here to save a custom player, it should be accessible when you open Presenter (even a new instance) and you'll want to apply it before laying out the rest of your slides. If you'd like to submit a feature request about setting it as a default, you can do so here.
