Just replace "My Course Title" with your new title text. Only, keep in mind that if you do republish later, your newly published files will overwrite this change.
Thanks for the reply! That worked to change the title of the course in the player...but do you know how to get the title to change in the Internet Explorer window that comes up as well? I've attached a screenshot of the two. Thanks so much!

I think you can do it by going into the published folder and modifying the xml files. I read that it's possible but I'm not sure it's a best practice.
You can open the presentation.xml file in the data folder (in Notepad) and change the title here:
[---
My Course Title
---]

You'll need to open the player.html file in your published output and look for the following line:
[
Some text here
]
Just replace the characters in that TITLE section with Marrow Drive Volunteer Driving and you'll be good to go.
