The templates are just presets. You can see some of the differences as you go through the template settings. The biggest difference is with the tradeshow loop where it's set to slide only and with most of the navigation disabled. If you go to the navigation controls tab and switch to tradeshow you'll see the control settings change and the loop enabled.
In the years that I've used Articulate (as a customer and now employee) I've never used the presets. I usually start with the default and then make my own customizations and save as a template.
