Do you have a blank slide as the first slide in your quiz? If so, that option will display a previous and next button by default.
One approach could be to use a freeform question slide as the first slide. For instance, add a freeform pick-one slide with a button that says, "I'm ready to start the quiz." Then your learner can select that button and click the Submit button. Be sure this question won't be included in the quiz results score.
