Quite randonly when I preview or publish a quiz, an option wont publish. There will be a gap for the option but the text doesn't show. If I close and -re-preview, the same might happen but with a different option.
Another example here of the same problem but worse. I created a matching drop drown quiz.. When I previewed the quiz before publishing, it was fine. Now I've published the quiz, the text is missing for everything, question and options. See attached.

Can you please clarify what "options" aren't being displayed? Also, if you can provide a screen shot, I would really appreciate it.

Usually one question option is missing.Happens randomly. I can then close the file and preview again and a different option would be missing.

Do you have Carbonite installed on your machine?

Not that I'm aware of - never heard of Carbonite to install it explicitly unless its comes with something else.
