I think your best bet, if you aren't already doing so, would be to insert your quiz in a Presenter course. That way, when publishing to your LMS, you'd be able to track your course by slides viewed rather than quiz-based. Here's a video explaining the process.
Another option which may or may not work in your case would be to adjust the Reporting options to Complete/Incomplete. Depending on how your LMS interprets this setting it might be another way to at least view activity if you aren't concerned if they pass or not.
