Is it possible to customize the player so the menu changes after the player visits each slide?
My colleagues and I would like to place an icon such as a check mark/bullet point or change the color after the player completes a slide. It would be very similar to a state option for objects or text.

With the built in player, no - but if you're comfortable with coding and deploying for Flash you may be able to create that using the Storyline SDK. Additionally, you could remove all player elements, and create a "player" look and feel with objects and state changing by starting with a chromeless player.
