I'm not sure I'm clear on what you're trying to do - do you want to keep the current project open or save it, and move onto a new project?
If you'd like to keep the project you're working on open, you can start a new Storyline project by opening up a second instance of SL by opening it from your start menu (or wherever you normally open SL for the first time).
If you'd like to close the project you're working on, and start a new one you can do so from within SL by clicking on the "A" (Articulate logo) in the top left hand side. There you'll be able to choose how to save your current project, and then once saved click on "New" for a new project.
