No can do. You can preview by slide, scene, or story. A published output is one size only and that's all of the slides and scenes in the story. I think this would make a great feature request. As an added bonus, a property for "Exclude Scene from publish" would let you keep some build-up or working scenes with objects in your project without worrying about pumping up your filesize or adding extra time to the publish.
One way we've worked around this is by dividing the project into sections, getting them perfect by themselves, and assembling them into a "master file" as they reach perfection.

You can preview individual scenes, but not publish. However, I have heard others ask for this ability as well. Would be a great feature request: http://www.articulate.com/support/contact/submit.php?form=feature
