If you're hosting your content on an LMS, the level of anonymity really depends on the LMS. If you're having users login to take the course, then their information could be pretty easily tracked that way. In Articulate Online, for example, you can link your users to a public content item and choose not to use a guestbook, and that would ensure anonymity.
