I'm not sure if you can do this with the built-in Submit button, but you can make your own Submit button that functions the same way, and create different states with different colors.
Can you just create your own Submit button, and add a trigger to it to "submit interaction" or "submit results" when it's clicked? Let me know if you need a sample.
How do you create your own submit button and then put it in the same place? It looks like I can't put a submit button where the old one was because it's outside of the available slide area.

In the meantime, I'm happy to step in! You can use the Slide Masters to place a button and name it "Submit Button". This will make sure the button is displayed in the exact same place on every slide.
Alex, I'm sorry I didn't receive the email that you had replied to me. If you want to modify the properties of the built in Submit button, you might be able to modify the CSS style codes for that button the way some others have done for other objects.

There isn't a way to change the color based on a user action - but that does sound like a neat idea! Could you share it as a Feature requests here.
