I'm creating a course where the learner will, at various times, write things down in input boxes--then at the end I want to be able to format these inputs into a single document and have the learner e-mail it to themselves or print it out. Can someone point me to an article or tutorial that would help? Or is this pushing the limits of what Storyline is capable of too far? Thanks!

You'll want to ensure the user is allowed to resume, vs. starting the course anew. Also, any items such as variables or text entry are saved when the user leaves that slide, but not if they close the browser window while still on that slide.
Your resume data is stored in a cookie - so if the user is accessing the course from another browser it may not pick up where they left off. Similarily if they were to clear out their browser history and cache it would remove that resume data as well.

Wow that's pretty cool. Where is the content stored, is there a session cookie or something similar?
