Slide layers are connected to a particular slide - so you can't set it up that the layers would appear separately within your menu. If your slide's themselves aren't showing in the menu - you may need to just reset the menu from your story as described here.
In regards to editing the next/previous buttons - what part are you looking to edit?
If you'd like to remove them from particular slides, you'll need to do so within the slides properties

In regards to editing the next/previous buttons - what part are you looking to edit?
If you'd like to remove them from particular slides, you'll need to do so within the slides properties
If you'd like to change what they say, you'll need to make those changes in the player labels
If you'd like to change how they navigate, you can adjust the triggers for the individual buttons on a slide by slide basis, and the previous button by default will always return you to the slide you last saw.
