Creating a record of participants

I'm pretty new to Storyline and really enjoying developing with it, but have a question for a project I'm doing. I need to be able to have a record of people who go through the training module I've built - we can do this in really any way, but we'd like to do it outside of our LMS if possible. The ideal option would be a CSV output of email addresses that are entered into the "Thank you" slide or something like that, but if that's not feasible or there's a better way, I'm open to other options.

LMS are the traditional route but clever people in these forums have used Google Sheets and custom web services to function as barebones LMS-like systems. The solutions require quite a bit of scripting knowledge

Have you considered embedding a Google Form as a Web Object to capture names and email addresses?
