I want to use my own buttons in the banner (instead of the standard forward - backward ) and add additional info, like progress (for instance: slide x from n).
I know that I can remove items through the Properties, but how to add your own items?
Further to what Phil has said, you would need to remove all of the player buttons and then build your own custom interface directly on to the slide. You could use the tools in Storyline to create your interface but I tend to create most of the elements I need in Adobe Illustrator or Photoshop for a more polished look. Here's an example of how a custom interface can look:

You can add custom buttons to the slide, you cannot add to the player itself.
