I just tried this in my own Storyline file, and wasn't able to replicate the behavior. You'll want to make sure that you're working with local project files, as working on a network or USB drive could cause unusual behavior. Additionally, are you able to replicate this in a new file or is it only happening in this particular Storyline file? I'd suggest if it's just this one file to import it into a new Storyline file. Are you able to share your .story file with us here? If you'd prefer you can also share it here privately.
Hi Jane! Very odd indeed and I am able to see the behavior in your course. I am not able to replicate this issue with a new text entry box/variable. Have you tried this?

Will the data entry reference show in preview?

Yes, when you create a reference to a variable, that reference DOES show in Preview mode.
