How do I change the default location for my Storyline Templates? Currently mine are installed on a network drive rather than my hard drive. This causes a significant delay whenever I try insert a new slide.
While you can choose where to save your templates as you have been doing, it's not currently possible to change where the default location is installed. It would need to be a feature request. That being said, it would probably be best to have everything you are using when developing courses in Storyline to be on your local hard drive rather than a network drive. Take a look at this for more information.
Unfortunately, ‘My Documents’ folder points to my network drive and in most cases this is preferred except this time!I want to try this…change the folder name on the network drive from ‘My Articulate Projects’ to something like ‘zMy Articulate Projects’ so it is still there as a backup but Storyline won’t find it when I try to insert a new slide.Then I will get the ‘Manage Templates’option (I can’t remember exactly the name of the option) when inserting the new slide and can point it to a copied ‘My Articulate Projects’ folder on my local hard drive.Do you know what I mean?And more importantly, do you think that will work?
It won't really work. Everything is mapped to your "My Documents" folder and then the "My Articulate Projects" folder. Changing the name of the existing folder and then pointing it to a new one with the same/different name isn't currently possible. What will happen is that it will create a new My Articulate Projects folder in the same location as the one whose name you just changed.

It is the same with publishing. While you can change the location where each file is saved or published, it's not possible to set a different default location. It would make an excellent feature request though.
