I am also developing mobile app training. I'd like to capture images and videos of how the app behaves on an iPad, then transfer to my desktop for further editing w/Snagit before using in S360. Never done this before, and I'd appreciate any knowledge and insight you can share. Thanks much!

@Michael: WOW -- Great example! How did you get the little hands and "clicking" sounds to work?
UPDATE: I'm using a trial version of Reflector 3 for mirroring. It works well, but doesn't capture sounds nor does it have the neat hand cursor feature Michael used in his Android example. Does anyone know of an iOS mirroring app that does this ?

You could use an IPad pic with a transparent cutout and place it over the video in Storyline. Here is an (Android) example.

These are the phone's actual click sounds; the hand cursor came from the mirroring app I used. Here is some info.
