First, what version of Storyline are you using? Also, are you hoping to disable the gestures "pinch" or "double-tap" to zoom in and out on a mobile device?
The HTML5 gestures are enabled automatically. But there are a few ways you can modify how it'll behave:
Swiping between slides is disabled when you restrict or lock navigation for your course. To swipe between slides, use free navigation.
HTML5 gestures are automatically enabled, so you don’t have to do any extra work. (In Storyline 360, you can turn off swipe gestures on a slide-by-slide basis if you don’t want learners to swipe between slides.)
There isn't an option to stop the double tap from zooming in.

I want to disable gesture double finger zooming. I tested all the html meta tag codes, but it doesn't work at all.
