Sorry for my bad english... And you don't hear my accent: it's worse !
What I want is in the Drop-Down quiz, when I choose an option, this option doesn't appears anymore in the others Drop-Down. So I think, it's your second options.
It's no problem! Just want to make sure I understand what you're wanting to do before I post a bunch of information
I don't think you'll be able to do this with the built-in version of the Matching Drop-Down quiz. You're going to see all of the match options you add with that one. You could possibly make a free form quiz, though, and simulate the look of it, or even design your own drop-down. But this may be pretty time consuming as you'd probably have to use variables and triggers to figure out which answer was selected and when to show it again or not show it again. However, if you only have a couple of matches, it may not take that much time.

Hi Sebastien
Are you not wanting the user to be able to change their selection, or do you not want the response to show up as a match to other choices?

That isn't a problem, it was just a question from one of my client.
