Is there a way that I can have a user click on an abject and have an email sent to me with the score of the quiz or confirmation that the user has completed the training? (We currently don't have an LMS to handle this for us).

Hi Eric! When you 'Reply', there is a hyperlink option in the format area as shown below:
Just highlight the text you would like to link, click the hyperlink button, and insert URL that you are pointing to.
