When I make text into a hyperlink, it immediately changes color and is underlined. I then have to change it back to the way I want it. Is there some way to format the color, font, size, no underline, etc that the text becomes when given a hyperlink? Maybe on the slide master?

What do you need to format exactly? "Format" is kind of a broad term.

The color is determined by the color scheme. Go to Design > Colors and create a new color scheme to see the hyperlink color.
Don't believe you can get rid of the underline.
You should be able to highlight the text and change the default font and size but not how it will change when clicked.
You could look at putting a hotspot instead over your chosen text and then have the hotspot trigger launch a URL.
