I don't want a menu to appear until the slides have been visited. So that they can only see the menu on slides that have been to. Is there any way of doing this in Storyline 2? Any help appreciated.
There isn't a way to hide the menu until all slides have been visited but you could set up the menu to be a drop down tab instead of just a side bar menu. The tutorial Wendy linked to will walk you through those different options.

are you talking about the player menu or you have a custom menu?
If player menu, you can set the navigation to restricted and apply these options...see here
