Hello, Maria. Happy to help; let's dive into some scenarios and options!
Quick pro-tip first: since a layer is part of a slide, the note text will be the same throughout. If you need to have different text, one way can be to put a slide layer on its own slide.
Scenario 1: If you're referring to the Notes tab in the player, here's how to disable that section:
Go to the Home tab on the ribbon and click Player.
When the Player Properties window opens, uncheck the Notes box.
When you're finished, click OK to close Player Properties.
Scenario 2: If you're looking to have the Notes tab enabled, but need to customize its view on a slide-by-slide basis, here's how to set that up:
Click on the gear icon on the slide(s) where you'd like to change the slide properties.
Under Player features, click on Custom for the selected slides.
Check or uncheck the Notes option.
If none of these scenarios hit the mark, could you walk me through your goal? I'm really curious to know more and would love to share more ideas. I'll be here!

Thanks so much for the response! I was looking to just them off for a
particular slide not for the entire course.
