The short answer is that you are looking at the "Recently Used Files" list. Deleting those file names from that list doesn't delete them from your computer. As you continue to open new files, the list is updated, and files that aren't opened drop off the bottom. 

A more esoteric answer is that if you have to change it, you can go into the registry and edit it. If you knew how to edit the registry without destroying your computer, you would know enough you wouldn't need to ask that question here.
