As I can see at the Player Text Labels there are no special characters included at Button fields, but < appears on PREV button and > appears on NEXT button.
I don't believe that's currently possible. This is actually part of the player design and button design, so it won't appear in the text labels (as you've seen). If you'd rather not show these arrows, it may be best to remove the built-in navigational buttons and create custom "Next" and "Previous" buttons for your slides.
In the meantime, if this is something you'd like to see in a future release of the software, you may want to submit a feature request:
