I'm running into the same issue. When I open a SL360 course published online, it always gives this screen first (see attachment). It does not matter wether I'm using the classic or modern player.
Only after you click on the play button, the course starts. This is not a very appealing page to land on though.
In the Player options, you can change the background colors. Go to Colors & Effects, and under Colors, show advanced color editing. Under Edit Item, select Base. Main Background and Slide Background are the two you should change to white or other color, in order to remove the gray.
Maybe I was not understanding, but if the issue is the play button, I believe this is due to browser security issues when the first screen has audio playing automatically.

I'm reaching to the same conclusion here. This is only an issue in chrome, it is dependant on this: https://developers.google.com/web/updates/2017/09/autoplay-policy-changes#webaudio
My course has audio at startup.
update: when I publish the course without the audio at startup it starts without a problem

It seems to be due to the audio at the first slide.
I've done a brief test removing the audio at the first screen and I've verify that the play button has dissappear.
