When I publish my course with HTML5 and play the course on my iPad, I get the launch screen with the play button (ioslaunch.html from my research). However, when I look in my published files, I can't find this file. I'd like to modify this page, if possible, to add some instructions for users.

You can change slide thumbnail that is displayed or add you own bitmap. For some info, see here under Step 2.
