Yes, the free trials are fully functional, and you can activate your trial software with your serial number(s) after purchase. Any content you create during the trial will still be accessible and usable after you purchase, too. Of course, should you decide not to purchase, you won't be able to edit or republish any projects.
I guess I was wondering because I've been doing the tutorials, and then try to take what I've learned into the free trial and the pages look totally different. (Example - the animation pane is a cool feature, but I cannot find it on the actual product.)

Sorry for the difficulty. Here's where you'll see the Animations pane in Storyline:
In order to apply any animations, you'll also need to make sure you're in Slide View (not Story View) and click on any object.
