I've got a great image from the content library that I want to use as the background, however I need the main focus of it to be a handshake and with my current design standard, I have a text box covering it. Is it possible to "flip" the image so it's a mirror version instead?

Yes. Picture format tools > Rotate > Flip Hoz.
