I am creating a course that has two language versions w/in the same project. The question I have is is there any way to only show the menu for the language branch/ scene that they choose?
You can't hide/show parts of the menu based on a selection made in the presentation. You would need to create your own menu and maybe trigger a lightbox of that self-made menu. Unfortunately, if you want to use tabs at the top of the presentation to trigger the menu, I believe you would need to create 2 new tabs (one for each language) since you can only add one trigger per tab.
So maybe something like this with 'Slide:' referencing the self-made menu:
