I've had over 1000 variables in a project. Storyline can handle that no problems, but, I did run into an issue with the suspend data limit in SCORM. I didn't even know this suspend data existed until the good folks at Articulate told me that the reason my course wasn't saving all the data entered by the user was that the suspend data limit had been reached. Essentially, it meant that the particular version of SCORM I was publishing to could only 'remember' a certain amount of data (in MB). He recommended I switch from SCORM 1.2 to 2004, 4th edition, and voila, problem fixed.
Thanks for sharing that here - never too late to offer advice, solutions and ideas! Glad you were able to change to SCORM 2004 4th edition and get everything working as you needed. :-)

I don't think there is a limit, I have had over 300 in a project
I know this is a bit old, but I'll chime in.
