How big do you want it to be? That's the limit. Unlike Studio, Storyline isn't tied to a specific set of dimensions. You can make it as wide or tall as you want it to be. There may be some practical limitations but I haven't hit a limit.

The limit I've seen is for older mobile devices - anything larger than 640x480 won't play on older iphone 3Gs and ipod touch. Catering to that segment is sacrificing a lot.
Yes, you can set the video size to whatever you want, however there could obviously be playback issues based on hardware.
I run screens recordings at 1024x768 w/ no probs depending on hardware.. Videos are converted to mp4. Even my droid incredible2 will run the videos, but the browser doesn't scale the player, so the controls are off screen.
In terms of video, I'd be more concerned about the total size (i.e., how much bandwidth it takes to send over the network). Storyline will encode videos for better efficiency. However, the larger the dimensions a video is, the bigger the size it will have.
When adding a video, IMVHO, it should only be as large (screen size-wise) as it needed for it to be viewed well and only last as long as needed. Dividing it up in chunks is often a good thing to do.
Networks have gotten a lot better and more robust over the years--still, that does not excuse us, again, IMVHO, to develop courses with heavy video needs that could slow down a network. Our courses need to be "good citizens" on the networks they run over. Not everyone has robust network abilities worldwide.

You can really do some cool things with video in Storyline. If you wish to go with a larger video size, all you have to do is resize your canvas. If you want to go full 1080, just set your canvas to the appropriate dimensions to match your source video. You can do this in the story size area.

So is there a happy medium size that you've arrived at so that content is consistent across desktop browsers, tablets & mobile ?
I am wondering too if there is a format that, in terms of pixel, could be more "standard" with a view to hmtl5 and iPad delivery.
