A lot of the subtle things that I find impressive my clients do not even notice. I find clients love Drag and Drops and drag over interactions. Often I find these contrived.
I love the clever things like using variables to track and give feedback later on in a course
I'd say what generates a "wow" very much depends on your client/audience. See this example interaction here. An engineer's reaction might be "wow", an HR person might yawn

I agree with Phil in that they like the drag and drop. They also like it when I add the ability for users to take notes.
