I've seen a few users ask the same question in the forums, but have yet to see a community generated solution, as the mobile player does not have an option to display in full screen at start. With that being said, it would be a cool feature request!
The player app can be downloaded in these languages (I guess that is dependent on your AppStore language settings): English, Czech, Dutch, French, German, Italian, Japanese, Korean, Polish, Portuguese, Russian, Simplified Chinese, Spanish, Swedish, Traditional Chinese, Turkish. However, there is no option to manually change either language or color scheme.
Even I learn something new every day - hadn't ever thought about downloading it in other languages! You can also update the player text labels for particular languages as noted here in the in the comparison chart of Flash, HTML5, and the mobile player. You'll also see noted there that you can't modify the colors of the player.

Ok but that's good news anyway that you can download the app in different languages.
I live in Sweden but my app is in English so I wonder where and when you make your choice? When installing the app?

I'd imagine you make the choice for your entire iTunes store? You'll want to look into the language settings enabled.
