Are you referring to the responsive player design in Storyline 360?
If so, currently there isn't an option to customize those settings. Here's a super helpful interactive demo of which Player settings are supported in the responsive player.
I could definitely see those options coming in handy though- would you mind sharing your thoughts directly with our team over here?
