How do I change the color of the hover when on a question slide. Ex. I have a multiple choice questions and as I hover over the answer there is a color filling the choice, however in the ribbon I only see how to change the shape or radio button color.

check the state of that choice. you can delete the hover state.

You can change this in the Design Tab, under Colors/create new theme colors, the Control 1 is the color for the question hover:
