I turned off the seekbar in the quiz questions (Player Features - Custom for selected slides - unchecked Seekbar), but the seekbar still shows. I've never had that happen before.
To test it, I turned off the seekbar in the Player Properties for the entire lesson and the seekbar was turned off for the quiz. This fix requires manually turning the seekbar back on for all of the content screens. That's a work-around, but not very efficient.
