I've built a short course that requires the user to certify that they have understood the content at the end, it also triggers a completed status in the LMS. In SL1, I have always used a multiple choice question - with just one possible answer - and edited the slide to look a statement. Now I'm using SL2 but it doesn't allow for one answer options in multiple choice questions? Or am I just missing something?
In your sample, were you able to preview or publish the question and confirm it worked? When I opened your file, I was able to see the quiz but when I previewed or published I had the original problem.
I was able to see the issue as well. This has been shared with the QA team, and I will share here when there are any updates. You can use a true/false and delete the second choice in the meantime.

I didn't have any problems in SL2 with adding and selecting only one possible answer in multiple choice quiz (see the attached file).
