Does anyone know if there's an easy way to increase the volume across all slides at once? Currently you have to go to each audio clip and increase the volume.
Optimize Audio Volume normalizes audio throughout your course for consistent volume across all slides. If your course audio already has consistent volume, you can speed up the publishing process by unchecking this option.
As far as overall level adjustment, I'd check out the findings shared by Russ here.

There is a setting to optimize the audio in your course:
