For your first question, would these be values input by the user? If so, as long as your course is reporting to an LMS, we'll send data detailed here throughout the users interaction with a course. It won't all go at one time, it'll go as the learners complete and navigate to new slides.
The results variables that are generated on a results slide will be passed to the LMS when the user visits that results slide and you're using that results slide as the tracking/completion method in your Publish options.
