I go through and enable the seekbar for all slides, but for no apparent rhyme or reason some of them become unchecked. Is there a way to stop this from happening?

Can you confirm what version of Storyline you’re using? Go to Help > About Storyline.
Did you import any slides from other projects?
It sounds like the seekbar is enabled on the Player Properties level. For individual slides, can you check if you're using a custom player setup, or if they're using default settings? If you'd like to share your .story file, I'm happy to have a look at that too!
Can you share a copy of your .story file here with us? I'd love to take a look.
Also, can you check that you're working on local project files as detailed here? Working from a network or shared drive is known to cause issues with courses and odd behavior.

I did import some slides. The slides are randomly becoming unchecked.
I'm using the most current version of storyline 360.
