I am wondering if I can set a custom slide size and make it default to that size each time I start a new project? I know how to change the default size, but I'd like to keep it that size for every project I do without having to go in and change it each time a start a new project. Any help?

This sounds something very useful and is actually something I have been wondering myself. It doesn't look like it, unfortunately.
The options related to the Story size are limited. I suggest sending this over as a feature request. You can submit your case use here.
I think if they hear from enough users they may include this in their development roadmap.
